DescriptionEriodictin belongs to the class of organic compounds known as flavonoid-7-o-glycosides. These are phenolic compounds containing a flavonoid moiety which is O-glycosidically linked to carbohydrate moiety at the C7-position. Eriodictin has been detected, but not quantified in, several different foods, such as pepper (c. frutescens), orange bell peppers (Capsicum annuum), green bell peppers (Capsicum annuum), red bell peppers (Capsicum annuum), and yellow bell peppers (Capsicum annuum). This could make eriodictin a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on Eriodictin.
