Stilbene glycosides are compounds structurally characterized by the presence of a carbohydrate moiety glycosidically linked to the stilbene skeleton. Desoxyrhaponticin is practically insoluble (in water) and a very weakly acidic compound (based on its pKa). Desoxyrhaponticin can be found in garden rhubarb, which makes desoxyrhaponticin a potential biomarker for the consumption of this food product.
