Long-chain fatty acids are fatty acids with an aliphatic tail that contains between 13 and 21 carbon atoms. Hexadecanedioate is practically insoluble (in water) and a weakly acidic compound (based on its pKa). Hexadecanedioate can be found in a number of food items such as longan, soy bean, american pokeweed, and black crowberry, which makes hexadecanedioate a potential biomarker for the consumption of these food products.
