DescriptionSelenodiglutathione, also known as gssesg, is a member of the class of compounds known as peptides. Peptides are compounds containing an amide derived from two or more amino carboxylic acid molecules (the same or different) by formation of a covalent bond from the carbonyl carbon of one to the nitrogen atom of another. Selenodiglutathione is slightly soluble (in water) and an extremely strong acidic compound (based on its pKa). Selenodiglutathione can be found in a number of food items such as broad bean, common sage, agave, and babassu palm, which makes selenodiglutathione a potential biomarker for the consumption of these food products. Selenodiglutathione may be a unique E.coli metabolite.
