Ketones that have one or more alpha-hydrogen atoms undergo keto-enol tautomerization, the tautomer being an enol. Thus, 8-nonen-2-one is considered to be an oxygenated hydrocarbon. 8-Nonen-2-one is a baked and fruity tasting compound. 8-Nonen-2-one has been detected, but not quantified in, milk and milk products. This could make 8-nonen-2-one a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on 8-Nonen-2-one.
