Gamma butyrolactones are compounds containing a gamma butyrolactone moiety, which consists of an aliphatic five-member ring with four carbon atoms, one oxygen atom, and bears a ketone group on the carbon adjacent to the oxygen atom (xi)-(Z)-5-(3-Hexenyl)dihydro-2(3H)-furanone has been detected, but not quantified in, herbs and spices. This could make (XI)-(Z)-5-(3-hexenyl)dihydro-2(3H)-furanone a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on (xi)-(Z)-5-(3-Hexenyl)dihydro-2(3H)-furanone.
