DescriptionLauric aldehyde, also known as dodecyl aldehyde or N-dodecanal, belongs to the class of organic compounds known as medium-chain aldehydes. These are an aldehyde with a chain length containing between 6 and 12 carbon atoms. Thus, lauric aldehyde is considered to be a fatty aldehyde lipid molecule. Lauric aldehyde is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Lauric aldehyde is an aldehydic, citrus, and fat tasting compound. Outside of the human body, Lauric aldehyde is found, on average, in the highest concentration within a few different foods, such as corianders, sweet oranges, and lemons and in a lower concentration in mandarin orange (clementine, tangerine) and limes. Lauric aldehyde has also been detected, but not quantified in, several different foods, such as fruits, mollusks, citrus, carrots, and wild celeries. This could make lauric aldehyde a potential biomarker for the consumption of these foods. Lauric aldehyde, with regard to humans, has been found to be associated with the diseases such as asthma; lauric aldehyde has also been linked to the inborn metabolic disorder celiac disease. A long-chain fatty aldehyde that is dodecane in which two hydrogens attached to a terminal carbon are replaced by an oxo group.
