Those are amino acids in which the amino group is attached to the carbon atom immediately adjacent to the carboxylate group (alpha carbon), or a derivative thereof (s)-2,3,4,5-tetrahydrodipicolinate is slightly soluble (in water) and a weakly acidic compound (based on its pKa). (s)-2,3,4,5-tetrahydrodipicolinate can be found in a number of food items such as wasabi, java plum, tarragon, and scarlet bean, which makes (s)-2,3,4,5-tetrahydrodipicolinate a potential biomarker for the consumption of these food products (s)-2,3,4,5-tetrahydrodipicolinate may be a unique E.coli metabolite.
